Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup long-grain white rice, rinsed well
  • 2 cups water or chicken broth
  • 1/2 cup fresh cilantro, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, canned (drained) or frozen (thawed)
  • 1 cup pico de gallo or chopped tomatoes
  • 4 cups romaine lettuce, shredded
  • 1 avocado, sliced or mashed
  • 1/2 cup shredded cheddar or Mexican blend cheese, optional
  • 1/2 cup sour cream or plain Greek yogurt, optional

Instructions

  1. Combine the cubed chicken, olive oil, and lime juice in a large mixing bowl, ensuring the chicken is coated thoroughly.
  2. Whisk together chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl until blended. Sprinkle the spice mix over the chicken and toss until every piece is evenly coated. Set aside to marinate for at least 15 minutes.
  3. Bring 2 cups of water (or broth) and 1/2 tsp of salt to a boil in a medium saucepan. Add the rinsed rice, stir once, reduce the heat to low, cover, and simmer for 15-18 minutes, or until all the liquid is absorbed.
  4. Remove the rice from heat and let it stand, covered, for 5 minutes. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice.
  5. Preheat your air fryer to 380°F (190°C). Place the marinated chicken pieces in the air fryer basket in a single layer. Cook for 12-15 minutes, shaking or flipping halfway through.
  6. Divide the cilantro-lime rice among four bowls, topping each with cooked chicken, black beans, corn, and pico de gallo. Add shredded lettuce and slices or mashed avocado. Optionally, finish with shredded cheese and a dollop of sour cream.
  7. Serve immediately and enjoy the burst of flavors in every bite.
