Crispy Parmesan Potato Bites with golden crusts and tender interiors, perfect for any occasion.

- 2 tablespoons unsalted butter
- 1 (24 ounce) package baby Yukon Gold potatoes, halved
- 1/2 cup freshly grated Parmesan cheese
- 1 1/2 teaspoons garlic and herb seasoning
- 1 teaspoon kosher salt
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Place butter in a baking dish and melt in the oven for about 4 minutes.
- Score potatoes with a diamond pattern.
- Set potatoes aside and remove the pan from the oven to cool slightly.
- Stir Parmesan, garlic and herb seasoning, and salt into melted butter to form a paste.
- Spread about 1 teaspoon of the paste on each cut-side of the potatoes and arrange in the pan cut-side down.
- Bake until potatoes are tender and crust is golden, about 25 minutes.
- Let stand for 5 minutes before serving.
Notes
For a vegan twist, replace butter with a plant-based spread and cheese with vegan Parmesan. Adjust seasoning for desired heat level.
