Description

Crispy Parmesan Potato Bites with golden crusts and tender interiors, perfect for any occasion.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 (24 ounce) package baby Yukon Gold potatoes, halved
  • 1/2 cup freshly grated Parmesan cheese
  • 1 1/2 teaspoons garlic and herb seasoning
  • 1 teaspoon kosher salt

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place butter in a baking dish and melt in the oven for about 4 minutes.
  3. Score potatoes with a diamond pattern.
  4. Set potatoes aside and remove the pan from the oven to cool slightly.
  5. Stir Parmesan, garlic and herb seasoning, and salt into melted butter to form a paste.
  6. Spread about 1 teaspoon of the paste on each cut-side of the potatoes and arrange in the pan cut-side down.
  7. Bake until potatoes are tender and crust is golden, about 25 minutes.
  8. Let stand for 5 minutes before serving.

Notes

For a vegan twist, replace butter with a plant-based spread and cheese with vegan Parmesan. Adjust seasoning for desired heat level.
