Description

Savor the vibrant street flavors of Thailand with this easy Thai grilled chicken. Marinated in lemongrass and garlic, it’s perfect for any gathering.


Ingredients

  • 2 lb chicken thigh fillets (skinless, boneless)
  • 1 large lemongrass stalk (white part only, sliced 5mm thick)
  • 4 cloves garlic (peeled, whole)
  • 2 1/2 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 3 tbsp brown sugar or palm sugar
  • 2 tbsp vegetable oil
  • Nam Jim Jaew (traditional Thai dipping sauce)
  • Lime Sweet Chilli Sauce
  • Bottle of sweet chilli sauce
  • Lime wedges
  • Red chili (finely sliced, optional)
  • Cilantro / coriander leaves (optional)
  • Coconut rice

Instructions

  1. Blitz the marinade ingredients, except for the oil, in a jug until fully pureed.
  2. Marinate by pouring the mixture into a bowl, adding oil, and stirring to combine. Add chicken, toss to coat, and cover tightly. Marinate overnight or at least for 3 hours.
  3. Heat the outdoor BBQ grill on high or a non-stick pan over high heat.
  4. Cook the chicken on the BBQ or in the pan over medium heat until golden brown, approximately 5 to 6 minutes per side.
  5. Rest the chicken for 3 minutes off the heat before serving.

Notes

Marinating overnight enhances flavors significantly. Pair with refreshing side salads or sauces for a complete meal.
