- 2 lb chicken thigh fillets (skinless, boneless)
- 1 large lemongrass stalk (white part only, sliced 5mm thick)
- 4 cloves garlic (peeled, whole)
- 2 1/2 tbsp fish sauce
- 1 tbsp light soy sauce
- 2 tsp dark soy sauce
- 3 tbsp brown sugar or palm sugar
- 2 tbsp vegetable oil
- Nam Jim Jaew (traditional Thai dipping sauce)
- Lime Sweet Chilli Sauce
- Bottle of sweet chilli sauce
- Lime wedges
- Red chili (finely sliced, optional)
- Cilantro / coriander leaves (optional)
- Coconut rice
Instructions
- Blitz the marinade ingredients, except for the oil, in a jug until fully pureed.
- Marinate by pouring the mixture into a bowl, adding oil, and stirring to combine. Add chicken, toss to coat, and cover tightly. Marinate overnight or at least for 3 hours.
- Heat the outdoor BBQ grill on high or a non-stick pan over high heat.
- Cook the chicken on the BBQ or in the pan over medium heat until golden brown, approximately 5 to 6 minutes per side.
- Rest the chicken for 3 minutes off the heat before serving.
Notes
Marinating overnight enhances flavors significantly. Pair with refreshing side salads or sauces for a complete meal.
