- 3 green onions
- 1 medium jalapeno, seeded (optional)
- 1/2 cup chopped cilantro
- 2 teaspoons kosher salt
- 2 tablespoons lime juice
- 4 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1 teaspoon oregano
- 4 tablespoons olive oil
Instructions
- Start by draining and rinsing the beans and corn to remove excess sodium.
- Next, dice the bell pepper, chop the cherry tomatoes, and thinly slice the green onions.
- In a large bowl, combine all the vegetables and beans, then mix with the kosher salt.
- For the dressing, whisk together the vinegar, sugar, garlic powder, and cumin in a medium bowl.
- Gradually whisk in the olive oil until blended.
- Pour the dressing over the vegetable mixture and gently mix to combine all flavors.
- Serve immediately with chips for dipping, or refrigerate until serving.
- For the best flavor, let it marinate for 30 minutes or longer.
