A comforting Tex Mex chicken burrito bowl that brings bold flavors and wholesome ingredients together for a perfect meal.
Ingredients

- ½ cup chopped red onion
- 1 lime (sliced into wedges)
- 2 boneless/skinless chicken breasts
- Kosher salt and pepper
- 4 cups cooked brown rice
- 2 cups mild chunky salsa
- 2 teaspoons taco seasoning mix
- ⅔ cup canned corn (drained)
- ⅔ cup canned black beans (rinsed well and drained)
- ¼ cup chopped cilantro (plus more for garnish if desired)
- 2 cups shredded cheddar cheese for topping
Instructions
- Toss onions with lime juice from 2 wedges of fresh lime. Let sit while you prepare the rest of the dish.
- Pat dry chicken breasts. Sprinkle both sides with salt and pepper. Grill on a greased grill pan over medium-high for 2-3 minutes per side or until just cooked through. Remove from heat and dice the chicken after resting for 5 minutes.
- Combine cooked rice, salsa, taco seasoning, corn, black beans, cilantro, and the onion/lime mixture with chicken in a large skillet. Cook on medium-high to heat through, stirring frequently.
- Serve with cheese sprinkled on top and extra cilantro if desired, along with remaining lime wedges.
Notes
You can substitute grilled tofu or tempeh for a vegan version, and customize toppings based on preference.
