Description

A flavorful Mexican-inspired dish combining tender chicken, sweet corn, and zesty lime, served in a delightful rice bowl.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup corn (fresh or canned)
  • 1 cup black beans (canned, drained)
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Chipotle aioli for topping

Instructions

  1. Cook the diced chicken breast over medium heat until fully cooked. Season with salt and pepper.
  2. Combine the cooked rice, corn, black beans, cherry tomatoes, and cooked chicken in a large bowl.
  3. Drizzle lime juice over the mixture and stir to combine.
  4. Serve the mixture in bowls, topped with sliced avocado and a drizzle of chipotle aioli.
  5. Garnish with chopped cilantro for added flavor.

Notes

For added flavor, sear the chicken until golden before mixing. Use ripe avocados for the best creaminess.
