Description

A flavorful summer dish combining savory chicken and sweet corn over a bed of rice, topped with creamy sauce and fresh cilantro.

Ingredients

Scale
  • 2 pieces chicken breasts
  • 1 cup street corn
  • 1 cup cooked rice
  • 1/2 cup cheese (cotija or feta)
  • 1 bunch fresh cilantro (for garnish)
  • 1 piece lime (juiced)
  • Salt and pepper (to taste)
  • Creamy sauce (like ranch or crema, for drizzling)

Instructions

  1. Heat a pan over medium heat and add a splash of oil. Season chicken breasts with salt and pepper, then cook until golden brown on both sides and reach an internal temperature of 165°F. In the same pan, add the corn and sauté for 3-4 minutes until heated through and slightly charred.
  2. Start with a base of rice in each bowl. Top with the sliced chicken, followed by the sautéed corn. Sprinkle cheese generously, drizzle with your chosen creamy sauce, and finish with a squeeze of lime juice. Garnish with fresh cilantro.

Notes

Use organic chicken for better flavor. Fresh corn sweetens the dish significantly.
