Instructions
- Heat a pan over medium heat and add a splash of oil. Season chicken breasts with salt and pepper, then cook until golden brown on both sides and reach an internal temperature of 165°F. In the same pan, add the corn and sauté for 3-4 minutes until heated through and slightly charred.
- Start with a base of rice in each bowl. Top with the sliced chicken, followed by the sautéed corn. Sprinkle cheese generously, drizzle with your chosen creamy sauce, and finish with a squeeze of lime juice. Garnish with fresh cilantro.
Notes
