- 1/4 cup mayonnaise
- 1/4 cup sour cream

Instructions
- Grill the corn on the cob until it’s charred and cooked through, about 10 minutes.
- In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and salt to create a creamy topping.
- Once the corn is done, spread the mayo mixture evenly over each ear of corn.
- Sprinkle crumbled cotija cheese on top of the coated corn to give it that classic street corn flavor.
- Garnish with chopped cilantro and serve immediately for a burst of freshness.
Notes
For a vegan version, replace mayonnaise and sour cream with vegan alternatives, and use dairy-free cheese. Serve with lime wedges for an added zesty flavor.
