Description

A flavorful Mexican street food, street corn is grilled corn on the cob coated with a creamy mixture and topped with cheese and spices.


Ingredients

  • 4 ears of fresh corn on the cob
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)
  • Salt to taste

Instructions

  1. Grill the corn on the cob until it’s charred and cooked through, about 10 minutes.
  2. In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and salt to create a creamy topping.
  3. Once the corn is done, spread the mayo mixture evenly over each ear of corn.
  4. Sprinkle crumbled cotija cheese on top of the coated corn to give it that classic street corn flavor.
  5. Garnish with chopped cilantro and serve immediately for a burst of freshness.

Notes
