Description

A delightful poke cake combining moist yellow cake, fruity strawberry gelatin, and fluffy whipped cream, perfect for summer gatherings.


Ingredients

  • 1 box yellow cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 package (3 oz) strawberry gelatin
  • 1 cup boiling water
  • 1 cup fresh strawberries, sliced
  • 1 cup whipped cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven according to the cake mix instructions. Grease and flour a 9×13 inch baking dish.
  2. Prepare the yellow cake mix according to package directions, using water, oil, and eggs. Pour the batter into the prepared baking dish.
  3. Bake the cake until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes.
  4. Poke holes all over the top of the cake using a fork.
  5. Dissolve the strawberry gelatin in 1 cup of boiling water. Stir until completely dissolved. Pour the gelatin mixture over the cake, making sure it fills the holes.
  6. Allow the cake to cool completely, then refrigerate it for at least 120 minutes.
  7. Mix the whipped cream, powdered sugar, and vanilla extract until it forms soft peaks.
  8. Top the cake with the whipped cream mixture and arrange the sliced strawberries on top.
  9. Serve and enjoy!
