A delightful poke cake combining moist yellow cake, fruity strawberry gelatin, and fluffy whipped cream, perfect for summer gatherings.

- 1 box yellow cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 package (3 oz) strawberry gelatin
- 1 cup boiling water
- 1 cup fresh strawberries, sliced
- 1 cup whipped cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven according to the cake mix instructions. Grease and flour a 9×13 inch baking dish.
- Prepare the yellow cake mix according to package directions, using water, oil, and eggs. Pour the batter into the prepared baking dish.
- Bake the cake until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes.
- Poke holes all over the top of the cake using a fork.
- Dissolve the strawberry gelatin in 1 cup of boiling water. Stir until completely dissolved. Pour the gelatin mixture over the cake, making sure it fills the holes.
- Allow the cake to cool completely, then refrigerate it for at least 120 minutes.
- Mix the whipped cream, powdered sugar, and vanilla extract until it forms soft peaks.
- Top the cake with the whipped cream mixture and arrange the sliced strawberries on top.
- Serve and enjoy!

For best flavor, use fresh, ripe strawberries and homemade whipped cream. Chill the cake thoroughly for enhanced texture.
