Description

A light, fruity dessert that captures the essence of summer with fresh strawberries and a soft, custardy crumb.


Ingredients

Scale
  • 1 box white cake mix (plus ingredients on back of box)
  • 3 oz. strawberry jello
  • 1 cup boiling water
  • 1/4 cup cold water
  • 8 oz. cool whip
  • 8 oz. cream cheese
  • 2 tsp. vanilla
  • 1 cup powdered sugar
  • 16 oz. strawberries, sliced (optional for topping)

Instructions

  1. Prepare cake according to the directions on the back of the box using a 9×13 cake pan. Grease the pan well and line with parchment.
  2. Remove cake from oven and cool for at least 20 minutes.
  3. Poke holes in the cake with a fork, covering the whole surface.
  4. Combine boiling water and jello in a mixing bowl, stirring until dissolved.
  5. Add cold water and stir to combine.
  6. Pour jello mixture over cake, ensuring it fills the holes.
  7. Cover and refrigerate for 3 hours or overnight.
  8. Combine cool whip, softened cream cheese, powdered sugar, and vanilla and mix until smooth.
  9. Spread the mixture over the cooled cake, and layer sliced strawberries on top before serving.

Notes

Chill after adding the topping for cleaner slices. Use fresh strawberries for best results.
