- 300 ml Double cream
- 400 g Full fat cream cheese
- 100 g Icing sugar (sifted)
- 400 g Strawberries (finely chopped and drained)
- 200 g Strawberries (for topping, some whole and halved)
Instructions
- Combine the crushed digestive biscuits with the melted butter and press into a tin to create a firm base.
- Chill in the fridge while you make the filling to ensure it sets nicely.
- Finely chop the strawberries and place them in a sieve to discard any excess juice, setting them aside.
- Pour the double cream into a bowl, add the cream cheese and icing sugar, and whisk until thick, reaching a consistency similar to ice cream.
- Carefully fold in the chopped strawberries, ensuring they are evenly mixed throughout the cream mixture.
- Remove the chilled base from the fridge and add the cheesecake mixture on top, smoothing the surface for an even finish.
- Refrigerate for at least 240 minutes or overnight to allow the flavors to meld beautifully.
- To serve, carefully remove from the tin and top with the remaining whole and halved strawberries for a beautiful presentation.
