  • 400 g Strawberries (finely chopped and drained)
  • 200 g Strawberries (for topping, some whole and halved)

Instructions

  1. Combine the crushed digestive biscuits with the melted butter and press into a tin to create a firm base.
  2. Chill in the fridge while you make the filling to ensure it sets nicely.
  3. Finely chop the strawberries and place them in a sieve to discard any excess juice, setting them aside.
  4. Pour the double cream into a bowl, add the cream cheese and icing sugar, and whisk until thick, reaching a consistency similar to ice cream.
  5. Carefully fold in the chopped strawberries, ensuring they are evenly mixed throughout the cream mixture.
  6. Remove the chilled base from the fridge and add the cheesecake mixture on top, smoothing the surface for an even finish.
  7. Refrigerate for at least 240 minutes or overnight to allow the flavors to meld beautifully.
  8. To serve, carefully remove from the tin and top with the remaining whole and halved strawberries for a beautiful presentation.
