A weeknight favorite, this Sticky Grilled Chicken features a sweet-smoky glaze that caramelizes beautifully on the grill, making it both comforting and celebratory.

- 700g skinless boneless chicken thighs
- 1/2 cup ketchup
- 1/3 cup packed brown sugar
- 1/4 cup soy sauce (all purpose or light)
- 2 tbsp apple cider vinegar
- 2 tbsp olive oil
- 4 tsp Worcestershire sauce
- 4 garlic cloves, minced
Instructions
- Mix marinade in a large bowl.
- Scoop out 1/2 cup and reserve for basting.
- Add chicken, turn to coat, and marinate overnight (minimum 3 hours, up to 48 hours).
- Grill: Preheat to medium-high. Remove chicken from marinade, letting excess drip off. Grill thighs 4–6 minutes per side until internal temperature reaches 74°C/165°F.
- Brush reserved glaze in the last 2 minutes while rotating frequently.
- Rest the chicken for 5 minutes before slicing.
Notes
For a vegan option, swap chicken for large portobello caps. Adjust the sweetness of the glaze by reducing brown sugar if desired.
