Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 10 oz frozen chopped spinach (thawed and drained)
  • 14 oz canned artichoke hearts (chopped finely)
  • 8 oz cream cheese (softened)
  • 1/2 cup Greek yogurt (plain)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/4 cup mayonnaise
  • 2 cloves garlic (minced)
  • 1/4 cup chicken broth

Instructions

  1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Season the chicken with garlic powder, salt, and black pepper. Sear the chicken in olive oil for 2-3 minutes per side until golden.
  3. Remove the chicken, let it rest for a few minutes, and then dice or shred it into bite-sized pieces.
  4. In a bowl, mix cream cheese, Greek yogurt, mayonnaise, minced garlic, Parmesan cheese, half of the shredded mozzarella, chopped spinach, artichoke hearts, and chicken broth until well combined. Gently fold in the diced chicken and season to taste.
  5. Spoon the mixture into the greased baking dish, spreading it evenly, and top with the remaining mozzarella cheese.
  6. Bake uncovered for 25-30 minutes until bubbling and golden. Allow to rest for 5 minutes before serving.
