A flavorful and vibrant dish featuring spicy chicken, roasted sweet potatoes, and a tangy goddess sauce, perfect for any occasion.


Ingredients

  • 2 pounds boneless chicken breasts or thighs, cubed
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, chopped
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon chili flakes
  • 1 1/3 cup plain Greek yogurt
  • Sea salt and black pepper to taste
  • 1 lemon, quartered
  • 2 sweet potatoes, cut into wedges or quarters
  • 1/3 cup crumbled feta cheese
  • 1/2 cup pistachios
  • 1 cup fresh cilantro
  • 1/2 cup fresh basil
  • 1 to 2 jalapeños, halved and seeded, if desired
  • 1/4 cup lemon juice
  • 1/3 cup sliced green olives

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Toss the cubed chicken with 2 tablespoons of olive oil, 3 cloves of chopped garlic, smoked paprika, ground cumin, dried oregano, chili powder, chili flakes, and a pinch of salt in a bowl. Add 1/3 cup of Greek yogurt to keep the chicken moist and flavorful. If desired, thread the marinated chicken onto skewers for easy handling.
  3. Toss the sweet potatoes with the remaining 2 tablespoons of olive oil and season with salt and pepper. Spread them out evenly and roast in the oven for about 15 minutes.
  4. Remove the sweet potatoes from the oven after 15 minutes, pushing them to one side of the pan. Arrange the chicken skewers on the other side and add the lemon quarters.
  5. Return the sheet pan to the oven and bake for another 15 to 25 minutes, until the chicken is cooked through and the sweet potatoes are tender and caramelized.
  6. Combine 1 cup of Greek yogurt, the remaining clove of garlic, crumbled feta cheese, and lemon juice in a blender to create the spicy goddess sauce. Blend until smooth and season with salt to taste.
  7. Serve the warm chicken and sweet potatoes drizzled with the spicy goddess sauce and topped with crumbled feta yogurt and fresh herbs.

Notes

For best results, marinate the chicken longer for enhanced flavor.
