Description

Delicious spicy chicken burritos packed with flavor and perfect for family gatherings.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts, cut into strips
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4 to 1/2 tsp cayenne pepper (adjust to your heat preference)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lime
  • 1 1/2 cups long-grain white rice
  • 2 1/4 cups chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tsp salt
  • 1 tbsp butter
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt to taste
  • 8 large flour tortillas (burrito-size)
  • 2 cups Mexican cheese blend, shredded
  • 1 cup sour cream
  • 1 avocado, sliced
  • 1 cup salsa (your favorite kind)
  • 1/2 cup red onion, diced
  • 1 jalapeño, sliced (optional)
  • Hot sauce for the brave souls

Instructions

  1. Rinse rice until water runs clear, then combine with chicken broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let it sit for 5 minutes without lifting the lid. Fluff with a fork, then stir in butter, cilantro, lime juice, and salt.
  2. Combine chicken strips with all the spices: chili powder, cumin, paprika, garlic powder, onion powder, oregano, cayenne, salt, and pepper. Toss until every piece is well coated; let it marinate for at least 15 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Cook seasoned chicken in batches for 5-7 minutes until cooked through and slightly charred. Squeeze lime juice over the chicken while it’s still hot. Set aside and keep warm.
  4. Add both types of beans with cumin, chili powder, and a splash of water. Cook for 3-4 minutes until heated through and slightly mashed. Season with salt to taste.
  5. Warm tortillas in the microwave wrapped in damp paper towels for 30 seconds, or in a dry skillet for 30 seconds per side.
  6. Lay a warm tortilla flat and add about 1/2 cup rice down the center. Top with spicy chicken, beans, cheese, and your choice of toppings.
  7. Fold the bottom edge up over the filling, then fold in the sides. Roll tightly from bottom to top.

Notes

Allow chicken to marinate longer for enhanced flavor. Serve with fresh toppings for customization.
