Description

Ingredients

  • 1 pound chicken breasts
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 limes, juiced
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add chicken broth, black beans, corn, diced tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  4. Once cooked, shred the chicken with two forks, and stir in the lime juice and chopped cilantro.
