- 2 lbs boneless skinless chicken breasts
- ½ cup honey
- ½ cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated (optional)

- 1 tablespoon cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish
Instructions
- Place the boneless, skinless chicken breasts in the bottom of your slow cooker.
- Mix the sauce ingredients: In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger (if using), and sesame oil to combine well.
- Pour the honey garlic mixture evenly over the chicken in the slow cooker.
- Season with salt and pepper to taste, if desired.
- Cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and cooked through.
- Thicken the sauce by mixing cornstarch and water in a small bowl until smooth, then add it to the slow cooker in the last 30 minutes of cooking and stir well.
- Shred the chicken with two forks once done, return it to the pot and stir it with the sauce.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
For a richer flavor, marinate the chicken in the sauce overnight before cooking. This dish pairs beautifully with jasmine rice and sautéed vegetables.
