Description

Flavor-packed slow cooker chicken tacos combining savory chicken and zesty salsa for a mouthwatering taste that everyone will enjoy.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup chunky salsa
  • 1 packet taco seasoning
  • 0.25 cup chicken broth or water
  • 2 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika (optional)
  • Corn or flour tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, cilantro, avocado

Instructions

  1. First, get your chicken ready. If you’re using large, thick breasts, you can leave them whole. But if you’re in a hurry, cutting them into 2-3 smaller chunks will help them cook a bit faster and more evenly. Place the chicken in the bottom of your slow cooker—it’s okay if they overlap a little.
  2. Now, let’s build the flavor. In a small bowl, stir together the salsa, taco seasoning, chicken broth, lime juice, minced garlic, cumin, and that optional smoked paprika. You’ll notice the aroma immediately—it’s so vibrant! Pour this mixture evenly over the chicken in the slow cooker.
  3. Time to cook! Secure the lid on your slow cooker. For chicken breasts, set it to LOW for 4-5 hours or HIGH for 2-3 hours. For thighs, which are more forgiving, you can go LOW for 5-6 hours or HIGH for 3-4 hours.
  4. Once the chicken is fall-apart tender, use two forks to shred it directly in the slow cooker. Give everything a really good stir.
  5. Let it rest and thicken. After shredding, leave the lid off and let the chicken sit in the slow cooker on the WARM setting for about 15-20 minutes.
  6. Warm your tortillas! You can heat them directly over a gas flame, in a dry skillet, or wrap in a damp paper towel and microwave for 30 seconds.
  7. Assemble and serve. Set up a taco bar with all your favorite toppings and let everyone build their own masterpiece.

Notes

Consider adding diced jalapeños or a splash of vinegar for an extra zing. Timing is key for best results, cook your chicken low and slow for maximum flavor.
