Description

A delicious and easy slow cooker chicken fajitas recipe bursting with bold Mexican flavors, perfect for gatherings and customizable to your taste.


Ingredients

  • 1 ounce fajita seasoning
  • 3 bell peppers (sliced)
  • ½ sweet yellow onion (sliced)
  • 1 roma tomato (cut into wedges)
  • Zest of 1 lime
  • Juice of 1 lime
  • 2 tablespoons garlic (minced)
  • 4 boneless, skinless chicken breasts (approximately 2 pounds)
  • Kosher salt and ground black pepper
  • Tortillas (regular or gluten-free)
  • Sour cream
  • Fresh cilantro (chopped)

Instructions

  1. Prep: If you’re making your own fajita seasoning, combine all the ingredients in a small bowl and set aside.
  2. Crock Pot: In your slow cooker, add the sliced peppers, sliced onions, tomato wedges, lime zest, lime juice, minced garlic, and half of the fajita seasoning. Toss everything together to ensure even coating.
  3. Place Chicken: Lay the four boneless, skinless chicken breasts on top of the vegetable mixture. Sprinkle a pinch of kosher salt, ground black pepper, and the remaining fajita seasoning over the chicken.
  4. Cook: Cover the slow cooker and set it to HIGH for 150-180 minutes or LOW for 240-360 minutes, until the chicken is fully cooked and tender.
  5. Shred + Serve: After cooking, carefully remove the chicken from the slow cooker and place it on a large platter. Using two forks, shred the chicken and return it to the slow cooker. Mix well to combine everything beautifully. Serve the warm mixture immediately!

Notes

For a spicier version, add jalapeños during cooking. For a vegan option, substitute chicken with mushrooms and lentils.
