Ingredients
Scale
- 1 ounce fajita seasoning
- 3 bell peppers (sliced)
- ½ sweet yellow onion (sliced)
- 1 roma tomato (cut into wedges)
- Zest of 1 lime
- Juice of 1 lime
- 2 tablespoons garlic (minced)
- 4 boneless, skinless chicken breasts (approximately 2 pounds)
- Kosher salt and ground black pepper
- Tortillas (regular or gluten-free)
- Sour cream
- Fresh cilantro (chopped)
Instructions
- Prep: If you’re making your own fajita seasoning, combine all the ingredients in a small bowl and set aside.
- Crock Pot: In your slow cooker, add the sliced peppers, sliced onions, tomato wedges, lime zest, lime juice, minced garlic, and half of the fajita seasoning. Toss everything together to ensure even coating.
- Place Chicken: Lay the four boneless, skinless chicken breasts on top of the vegetable mixture. Sprinkle a pinch of kosher salt, ground black pepper, and the remaining fajita seasoning over the chicken.
- Cook: Cover the slow cooker and set it to HIGH for 150-180 minutes or LOW for 240-360 minutes, until the chicken is fully cooked and tender.
- Shred + Serve: After cooking, carefully remove the chicken from the slow cooker and place it on a large platter. Using two forks, shred the chicken and return it to the slow cooker. Mix well to combine everything beautifully. Serve the warm mixture immediately!
Notes
For a spicier version, add jalapeños during cooking. For a vegan option, substitute chicken with mushrooms and lentils.
