Ingredients

Scale
  • 1.52 kg / 3 – 4 lb beef brisket
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 2 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin powder
  • 3/4 tsp mustard powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 garlic cloves, minced
  • 1/2 cup / 125 ml apple cider vinegar
  • 1 1/2 cups / 375 ml ketchup
  • 1/2 cup / 110 g brown sugar, packed
  • 2 tsp EACH black pepper, onion powder, mustard powder
  • 1 tsp cayenne pepper
  • 1 tbsp Worcestershire sauce

Instructions

  1. Mix the rub ingredients in a bowl. Rub the mixture all over the brisket, ensuring it’s coated well.
  2. Combine the ingredients for the BBQ sauce in your slow cooker and place the brisket inside.
  3. Slow cook the brisket for 8 hours if using a 1.5 kg / 3 lb cut, or 10 hours for a 2 kg / 4 lb cut.
  4. Once cooked, carefully remove the brisket onto a tray.
  5. Pour the liquid from the slow cooker into a saucepan and bring to a simmer.
  6. Drizzle the brisket with a little olive oil and roast it in a preheated oven at 200C/390F for 15 minutes.
  7. Baste generously with the BBQ sauce and return to the oven for an additional 5 minutes.
  8. Slice the brisket thinly against the grain and serve with the remaining BBQ sauce.

Notes

Choose brisket with good marbling for best flavor. You can also double the recipe for larger gatherings.
