Delicious slow-cooked BBQ chicken tacos filled with flavors of authentic Mexican cuisine. Perfect for gatherings and customizable to your taste.

- 2 pounds boneless skinless chicken (1/2 breasts and 1/2 thighs)
- 2 tablespoons Kickin Chicken Seasoning (or another chicken seasoning blend)
- 1/2 cup BBQ sauce + 1/2 cup for later
- 16 oz bag frozen corn (thawed)
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1/2 teaspoon dried cilantro
- Salt & pepper to taste
- 1 can crispy fried onions (small can)
- 12 corn tortillas
Instructions
- Add chicken to the slow cooker and sprinkle well with the seasoning blend.
- Top with 1/2 cup of BBQ sauce and cover.
- Cook on high for 3-4 hours or low for 6-8 hours until fully cooked.
- Remove the chicken from the slow cooker and shred using two forks for fluffy texture.
- Add a ladle or two of the cooking juices back to the shredded chicken, discarding the rest.
- Toss the chicken with the additional 1/2 cup of BBQ sauce, returning it to the slow cooker on keep warm until ready to serve.
- In a large bowl, add the thawed corn along with the lime juice, olive oil, spices, salt, and pepper; toss until combined.
- Heat the corn tortillas according to package directions and serve loaded with shredded chicken, corn mixture, salsa, and crispy onions as desired.
