Tender slow cooker BBQ chicken tacos paired with a refreshing slaw, perfect for any gathering.

- 2 lbs. chicken breasts
- 1¼ c BBQ sauce
- 1 green bell pepper, small diced
- ½ red onion, diced
- 2–3 garlic cloves, minced
- ½ tsp paprika
- ½ tsp chili powder
- ¼ tsp cumin
- ½ tsp cracked pepper
- ½ tsp sea salt, more or less to taste
- 4 c cole slaw mix
- ¼ c mayonnaise
- ¼ c sour cream
- Juice of 1 lime
- 1 garlic clove, minced
- ½ tsp cumin
- ½ tsp cracked pepper
- ¼ – ½ tsp sea salt
- ½ tsp sugar (optional)
- ¼ c chopped cilantro
Instructions
- Place chicken into a slow cooker and season with garlic, cumin, paprika, chili powder, sea salt, and pepper.
- Add the diced green bell pepper and red onion, then cover everything with BBQ sauce.
- Cook on low for 4-6 hours, checking around the 2.5 to 3-hour mark to adjust seasoning if necessary.
- Once the chicken reaches an internal temperature of 165°F, shred it using two forks until it pulls apart easily.
- Transfer the chicken to a cutting board for easier handling.
- If desired, add extra BBQ sauce to thicken the mixture, then return the chicken to the slow cooker and set to warm.
- Meanwhile, combine all slaw ingredients in a bowl and toss. Chill for about 15 minutes before serving.
- Serve the BBQ chicken in warm tortillas, topping with the freshly made slaw and your favorite taco toppings, then enjoy!
