- 2 cups corn (3–4 raw ears), kernels removed
- 2 cloves garlic, chopped
- 3 ounces cream cheese, at room temperature
- 4 tablespoons salted butter
- 1 cup whole milk or heavy cream
- 1/3 cup plain Greek yogurt or mayonnaise
- 2 tablespoons fresh lime juice
- 3/4 cup crumbled cotija cheese
- 1 ear of grilled corn, kernels removed from the cob
- 1/4 cup fresh cilantro, chopped
Instructions
- Place the egg and flour in two shallow bowls. Season chicken with salt and pepper, ensuring flavorful chicken bites.
- Dredge each piece of chicken first in the egg, allowing excess to drip off, then coat in flour until evenly covered.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for about 5 minutes on each side, or until golden brown; then remove from the skillet.
- In the same skillet, add the chopped onion and sauté until it’s soft and translucent, letting the flavors bloom beautifully.
- Add the corn, garlic, and spices, cooking until the corn starts to caramelize slightly, about 5-7 minutes.
- Mix in the cream cheese, stirring until it melts seamlessly into the mixture, then gradually add in the milk for creaminess.
- Return the chicken to the skillet, allowing it to warm through and soak up those rich, creamy flavors.
- In a separate small skillet, melt the butter and stir in the remaining spices before drizzling over the chicken and corn mix for an extra depth of flavor.
- Serve the dish alongside a Greek yogurt or mayonnaise-lime mixture, topping with crumbled cotija cheese and a sprinkle of fresh cilantro for a wonderful finish.
Notes
For a vegan option, substitute chicken with tofu and use coconut cream instead of dairy products.
