- 4 chicken thighs or breasts
- 2 cups baby potatoes, halved
- 2 cups mixed vegetables (e.g., carrots, bell peppers, broccoli)
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried thyme or Italian seasoning
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a small saucepan, melt the butter and stir in the minced garlic, salt, pepper, and thyme.
- Place the chicken and vegetables on a large baking sheet. Pour the garlic butter mixture over them and toss to coat.
- Spread everything out in a single layer.
- Bake for 25-30 minutes or until the chicken is cooked through and the veggies are tender.
- Garnish with fresh parsley before serving.
