Ingredients

  • 4 chicken thighs or breasts
  • 2 cups baby potatoes, halved
  • 2 cups mixed vegetables (e.g., carrots, bell peppers, broccoli)
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or Italian seasoning
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small saucepan, melt the butter and stir in the minced garlic, salt, pepper, and thyme.
  3. Place the chicken and vegetables on a large baking sheet. Pour the garlic butter mixture over them and toss to coat.
  4. Spread everything out in a single layer.
