- 1 lb. Chicken (Cut Into Thin Strips)
- 1/2 Green Bell Pepper (Thinly Sliced)
- 1/2 Red Bell Pepper (Thinly Sliced)
- 1/2 Yellow Bell Pepper (Thinly Sliced)
- 1/2 Orange Bell Pepper (Thinly Sliced)
- 1/2 Red Onion (Thinly Sliced)
- 1 tbsp. Olive Oil
- 2 Jalapeno (Deseeded, Diced)
- 1 Lime
- 10 Flour Tortillas (6” Size)
Instructions
- Preheat your oven to 425°F (220°C).
- Combine all fajita seasonings with olive oil in a bowl and mix well.
- Add the chicken strips, bell peppers, onions, and jalapeños. Stir until coated.
- Arrange the chicken in the center of a sheet pan, and spread the vegetables around the edges.
- Wrap the tortillas in foil.
- Bake for 15 minutes. In the last 5 minutes, warm the tortillas in the oven wrapped in foil.
- Squeeze lime juice over the pan when done.
- Scoop chicken and vegetables into tortillas and serve.
Notes
For a vegetarian option, substitute chicken with tofu or mushrooms.
