Description

Delicious and easy-to-make sheet pan chicken fajitas that bring the vibrant flavors of Mexican cuisine to your table.


Ingredients

  • 1 lb. Chicken (Cut Into Thin Strips)
  • 1/2 Green Bell Pepper (Thinly Sliced)
  • 1/2 Red Bell Pepper (Thinly Sliced)
  • 1/2 Yellow Bell Pepper (Thinly Sliced)
  • 1/2 Orange Bell Pepper (Thinly Sliced)
  • 1/2 Red Onion (Thinly Sliced)
  • 1 tbsp. Olive Oil
  • 2 Jalapeno (Deseeded, Diced)
  • 1 Lime
  • 10 Flour Tortillas (6” Size)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine all fajita seasonings with olive oil in a bowl and mix well.
  3. Add the chicken strips, bell peppers, onions, and jalapeños. Stir until coated.
  4. Arrange the chicken in the center of a sheet pan, and spread the vegetables around the edges.
  5. Wrap the tortillas in foil.
  6. Bake for 15 minutes. In the last 5 minutes, warm the tortillas in the oven wrapped in foil.
  7. Squeeze lime juice over the pan when done.
  8. Scoop chicken and vegetables into tortillas and serve.

Notes

For a vegetarian option, substitute chicken with tofu or mushrooms.
