- 4 boneless skinless chicken breasts (or thighs)
- Salt and pepper, to taste
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- ½ teaspoon red pepper flakes (or more to taste)
- 1 tablespoon olive oil
- ⅓ cup finely diced shallots (or red onions)
- 2 tablespoons salted butter
- ¼ cup heavy cream
- 2 tablespoons chopped parsley or basil
- Prepared broccolini, for serving
Instructions
- Pound the chicken to ½ inch thickness and season with salt and pepper.
- Combine chicken broth, lemon juice, garlic, and red pepper flakes in a bowl.
- Preheat oven to 375ºF and heat olive oil in a large skillet over medium-high heat.
- Brown the chicken for 2-3 minutes on each side, then remove from skillet.
- Add shallots and broth mixture to the skillet, deglazing the pan.
- Simmer the sauce for 10-15 minutes until thickened to about ⅓ cup.
- Whisk in butter until melted, then add heavy cream off heat.
- Return chicken to the skillet, drizzle sauce over it, and transfer the skillet to the oven for 5-8 minutes until cooked through.
- Garnish with parsley or basil and serve with lemon slices.
Notes
For a vegan version, substitute chicken with king oyster mushrooms or tofu and use vegetable broth and non-dairy butter and cream.
