- 4 boneless skinless chicken breasts (or thighs)
- Salt and pepper
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- ½ teaspoon red pepper flakes
- 1 tablespoon olive oil
- ⅓ cup finely diced shallots (or red onions)
- 2 tablespoons salted butter
- ¼ cup heavy cream
- 2 tablespoons chopped parsley or basil
- Prepared broccolini, for serving
Instructions
- Pound the chicken breasts or thighs to a thickness of ½ inch. Sprinkle salt and pepper on both sides.
- Combine the chicken broth, lemon juice, minced garlic, and red pepper flakes in a bowl.
- Preheat the oven to 375ºF.
- Heat olive oil in a large skillet over medium-high heat. Add chicken, browning on both sides for 2-3 minutes. Remove and set aside.
- Add shallots to the skillet along with the broth mixture. Whisk and scrape the bottom of the pan to loosen brown bits.
- Simmer the sauce for 10-15 minutes until reduced to about ⅓ cup.
- Whisk in the butter until melted, then mix in the heavy cream and return to medium heat for 30 seconds.
- Add the chicken back into the skillet, drizzling sauce over each piece. Transfer skillet to the oven for 5-8 minutes until chicken is cooked through.
- Garnish with parsley or basil and serve warm with lemon slices and sides.
Notes
For a juicier result, use chicken thighs instead of breasts. Fresh lemon juice delivers better flavor than bottled.
