A comforting one-skillet chicken dish featuring a vibrant lemon garlic cream sauce, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • Salt and pepper
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • ½ teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • ⅓ cup finely diced shallots (or red onions)
  • 2 tablespoons salted butter
  • ¼ cup heavy cream
  • 2 tablespoons chopped parsley or basil
  • Prepared broccolini, for serving

Instructions

  1. Pound the chicken breasts or thighs to a thickness of ½ inch. Sprinkle salt and pepper on both sides.
  2. Combine the chicken broth, lemon juice, minced garlic, and red pepper flakes in a bowl.
  3. Preheat the oven to 375ºF.
  4. Heat olive oil in a large skillet over medium-high heat. Add chicken, browning on both sides for 2-3 minutes. Remove and set aside.
  5. Add shallots to the skillet along with the broth mixture. Whisk and scrape the bottom of the pan to loosen brown bits.
  6. Simmer the sauce for 10-15 minutes until reduced to about ⅓ cup.
  7. Whisk in the butter until melted, then mix in the heavy cream and return to medium heat for 30 seconds.
  8. Add the chicken back into the skillet, drizzling sauce over each piece. Transfer skillet to the oven for 5-8 minutes until chicken is cooked through.
  9. Garnish with parsley or basil and serve warm with lemon slices and sides.

Notes

For a juicier result, use chicken thighs instead of breasts. Fresh lemon juice delivers better flavor than bottled.
