- 4 boneless skinless chicken breasts (or thighs)
- Salt and pepper
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- ½ teaspoon red pepper flakes (or more to taste)
- 1 tablespoon olive oil
- ⅓ cup finely diced shallots (or red onions)
- 2 tablespoons salted butter
- ¼ cup heavy cream
- 2 tablespoons chopped parsley or basil
- Prepared broccolini, for serving
Instructions
- Pound chicken breasts or thighs to a thickness of about ½ inch. Sprinkle salt and pepper on both sides.
- Combine chicken broth, lemon juice, garlic, and red pepper flakes in a measuring cup.
- Preheat the oven to 375ºF.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Add chicken and brown for 2-3 minutes per side.
- Remove chicken and set on a plate.
- Lower the heat to medium; add shallots and chicken broth mixture to the skillet. Scrape up brown bits and simmer for 10-15 minutes until reduced.
- Remove sauce from heat, whisk in butter until melted, then stir in heavy cream.
- Add chicken back to the skillet, drizzle sauce over it, and transfer to the oven for 5-8 minutes until fully cooked.
- Garnish with chopped parsley or basil and serve with lemon slices.

Serve with rice, pasta, or sautéed vegetables. Ensure chicken is pounded evenly for uniform cooking.
