Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • Salt and pepper
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • ½ teaspoon red pepper flakes (or more to taste)
  • 1 tablespoon olive oil
  • ⅓ cup finely diced shallots (or red onions)
  • 2 tablespoons salted butter
  • ¼ cup heavy cream
  • 2 tablespoons chopped parsley or basil
  • Prepared broccolini, for serving

Instructions

  1. Pound chicken breasts or thighs to a thickness of about ½ inch. Sprinkle salt and pepper on both sides.
  2. Combine chicken broth, lemon juice, garlic, and red pepper flakes in a measuring cup.
  3. Preheat the oven to 375ºF.
  4. Heat olive oil in a large, oven-safe skillet over medium-high heat. Add chicken and brown for 2-3 minutes per side.
  5. Remove chicken and set on a plate.
  6. Lower the heat to medium; add shallots and chicken broth mixture to the skillet. Scrape up brown bits and simmer for 10-15 minutes until reduced.
  7. Remove sauce from heat, whisk in butter until melted, then stir in heavy cream.
  8. Add chicken back to the skillet, drizzle sauce over it, and transfer to the oven for 5-8 minutes until fully cooked.
  9. Garnish with chopped parsley or basil and serve with lemon slices.

Notes

Serve with rice, pasta, or sautéed vegetables. Ensure chicken is pounded evenly for uniform cooking.
