Juicy chicken meatballs enveloped in a creamy garlic butter sauce, served with orzo.


Ingredients

  • 1 lb chicken meatballs
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 cup orzo pasta
  • 1/2 cup heavy cream (or dairy-free substitute)
  • 1/2 cup Parmesan cheese (or dairy-free substitute)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish by lightly greasing it.
  2. Mix ground chicken, minced garlic, salt, and pepper in a mixing bowl.
  3. Form the mixture into meatballs.
  4. Heat butter and olive oil in a large pan over medium heat.
  5. Add meatballs, cooking until browned on all sides, about 8 minutes.
  6. Remove meatballs from the pan and set them aside on a plate.
  7. Cook the orzo in the same pan according to package directions, stirring occasionally.
  8. Add heavy cream and Parmesan cheese to create a creamy sauce.
  9. Return meatballs to the pan and gently stir to coat them in the sauce.
  10. Transfer everything to the prepared baking dish and bake for 10-15 minutes until heated through.
  11. Serve garnished with fresh herbs if desired.
