Description

Ingredients

  • 2 cups fresh strawberries, pureed
  • 1 1/2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 package (9 oz) graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator.
  2. Beat cream cheese, powdered sugar, vanilla extract, and strawberry puree in another bowl until smooth.
  3. Whip the heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the strawberry mixture.
  4. Pour the cheesecake filling onto the crust and spread it evenly.
  5. Refrigerate for at least 240 minutes or until set.
  6. Serve chilled, optionally topped with fresh strawberry slices.
