  • 2 tablespoons olive oil
  • 3 tablespoons mayonnaise
  • 34 oz Cotija cheese (crumbled)
  • 2 tablespoons lime juice
  • 1 tablespoon jalapeno peppers (finely chopped)
  • ½ cup fresh cilantro (finely chopped)
  • 2 tablespoons red onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil over medium heat in a skillet until shimmering.
  2. Add the frozen corn and cook, stirring occasionally, until the corn begins to char, approximately 7-8 minutes.
  3. In a large bowl, combine the charred corn with mayonnaise, Cotija cheese, lime juice, jalapeno, cilantro, red onion, garlic, chili powder, salt, and pepper.
  4. Toss everything together gently until evenly coated and serve chilled or at room temperature.
