- 3 tablespoons mayonnaise
- 3–4 oz Cotija cheese (crumbled)
- 2 tablespoons lime juice
- 1 tablespoon jalapeno peppers (finely chopped)
- ½ cup fresh cilantro (finely chopped)
- 2 tablespoons red onion (finely chopped)
- 2 cloves garlic (minced)
- ½ teaspoon chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil over medium heat in a skillet until shimmering.
- Add the frozen corn and cook, stirring occasionally, until the corn begins to char, approximately 7-8 minutes.
- In a large bowl, combine the charred corn with mayonnaise, Cotija cheese, lime juice, jalapeno, cilantro, red onion, garlic, chili powder, salt, and pepper.
- Toss everything together gently until evenly coated and serve chilled or at room temperature.
