Description

A creamy and flavorful Mexican street corn dip, perfect for gatherings and celebrations.

Ingredients

Scale
  • 2 cups corn (fresh, frozen, or grilled)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheese (such as cotija or Monterey Jack)
  • 12 jalapeños (finely chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the corn, mayonnaise, sour cream, cheese, jalapeños, lime juice, chili powder, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a baking dish and spread it evenly.
  5. Bake for 20-25 minutes, or until the dip is bubbly and slightly golden on top.
  6. Garnish with chopped cilantro before serving.
  7. Serve warm with tortilla chips.

Notes

For a lighter version, consider using Greek yogurt instead of mayonnaise. Freshly grated cheese enhances meltability.
