- 2 cups corn (fresh, frozen, or grilled)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup shredded cheese (such as cotija or Monterey Jack)
- 1–2 jalapeños (finely chopped)
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the corn, mayonnaise, sour cream, cheese, jalapeños, lime juice, chili powder, salt, and pepper.
- Mix until well combined.
- Transfer the mixture to a baking dish and spread it evenly.
- Bake for 20-25 minutes, or until the dip is bubbly and slightly golden on top.
- Garnish with chopped cilantro before serving.
- Serve warm with tortilla chips.
Notes
For a lighter version, consider using Greek yogurt instead of mayonnaise. Freshly grated cheese enhances meltability.
