- 1 lb chicken breast, diced
- 2 cups corn, fresh or frozen
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup cilantro, chopped
- Lime wedges for serving
- Cotija cheese for topping (optional)
Instructions
- Sauté onion and garlic in a large pot until softened.
- Add diced chicken and cook until browned.
- Stir in corn, black beans, diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Stir in cilantro before serving.
- Serve with lime wedges and top with Cotija cheese if desired.
Notes
For added flavor, let the chili rest for a few minutes off the heat before serving.
