Description

A vibrant and hearty chili combining tender chicken, sweet corn, and traditional Mexican spices for a warming delight.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups corn, fresh or frozen
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving
  • Cotija cheese for topping (optional)

Instructions

  1. Sauté onion and garlic in a large pot until softened.
  2. Add diced chicken and cook until browned.
  3. Stir in corn, black beans, diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Stir in cilantro before serving.
  6. Serve with lime wedges and top with Cotija cheese if desired.

Notes

For added flavor, let the chili rest for a few minutes off the heat before serving.
