Ingredients

  • 1.5 lb / 750g chicken breast, skinless boneless (~3 halves)
  • 1/2 cup Chipotles in Adobo Sauce (4 chillies + sauce)
  • 1 can (14 oz / 400g) crushed tomatoes
  • 2 garlic cloves, crushed
  • 1 tsp EACH dried oregano, cumin powder, and onion powder (or garlic powder)
  • 2 tsp sugar
  • 3/4 tsp salt
  • Pepper to taste
  • 3 tbsp olive oil
  • 2 tbsp lime juice

Instructions

  1. Cook the chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken breasts with salt and pepper, and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the pan and let it rest.
  2. Add the sauce: In the same skillet, add the crushed tomatoes, crushed garlic, chipotles in adobo, oregano, cumin, onion powder, sugar, and lime juice. Stir well, allowing the flavors to meld for about 5 minutes over medium heat.
  3. Shred the chicken: Shred the cooked chicken into bite-sized pieces and return it to the skillet, mixing with the sauce. Let it simmer for an additional 10 minutes to absorb those rich flavors.
  4. Serve: Enjoy the shredded chicken on tortillas, rice, or with toppings like cilantro and lime wedges.
