- 1 – 1.5 lb (500 – 750g) chicken thigh fillets
- 1 tbsp olive oil
- 4 tbsp orange juice
- 2 tbsp apple cider vinegar (or rice vinegar)
- 1.5 tbsp lime juice
- 3 garlic cloves, minced
- 1.5 tbsp chipotle or ancho chile powder
- 2 tsp dried oregano
- 2 tsp smoked paprika powder
- 1/8 tsp All Spice
- 1/4 tsp cinnamon powder
- 1/4 – 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- Black pepper to taste
- Tortillas or taco shells
- Pico de Gallo (tomato salsa)
- Sour cream
- Avocado
- Fresh coriander / cilantro
- Lime wedges
Instructions
- Place marinade ingredients in a ziplock bag, ensuring all ingredients are well combined.
- Add the chicken thighs to the bag and massage it to coat the meat thoroughly. Refrigerate to marinate for at least 3 hours, preferably overnight.
- Remove the chicken from the marinade and discard the residual marinade.
- Heat oil in a skillet over medium-high heat or grill on a barbecue.
- Cook the chicken for approximately 4 minutes on each side until cooked through and golden brown.
- Remove the chicken onto a plate and cover loosely with foil to rest for 3 minutes.
- Cut the rested chicken into strips and pile it into warm tortillas for delicious tacos.
Notes
For serving, consider topping with fresh cilantro, avocado slices, and a squeeze of lime for added flavor.
