Ingredients

  • 11.5 lb (500 – 750g) chicken thigh fillets
  • 1 tbsp olive oil
  • 4 tbsp orange juice
  • 2 tbsp apple cider vinegar (or rice vinegar)
  • 1.5 tbsp lime juice
  • 3 garlic cloves, minced
  • 1.5 tbsp chipotle or ancho chile powder
  • 2 tsp dried oregano
  • 2 tsp smoked paprika powder
  • 1/8 tsp All Spice
  • 1/4 tsp cinnamon powder
  • 1/41/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • Black pepper to taste
  • Tortillas or taco shells
  • Pico de Gallo (tomato salsa)
  • Sour cream
  • Avocado
  • Fresh coriander / cilantro
  • Lime wedges

Instructions

  1. Place marinade ingredients in a ziplock bag, ensuring all ingredients are well combined.
  2. Add the chicken thighs to the bag and massage it to coat the meat thoroughly. Refrigerate to marinate for at least 3 hours, preferably overnight.
  3. Remove the chicken from the marinade and discard the residual marinade.
  4. Heat oil in a skillet over medium-high heat or grill on a barbecue.
  5. Cook the chicken for approximately 4 minutes on each side until cooked through and golden brown.
  6. Remove the chicken onto a plate and cover loosely with foil to rest for 3 minutes.
  7. Cut the rested chicken into strips and pile it into warm tortillas for delicious tacos.

Notes

For serving, consider topping with fresh cilantro, avocado slices, and a squeeze of lime for added flavor.
