Description
A comforting oven-roasted chicken dish with zesty lemon, fragrant garlic, and tender potatoes, elevated by Mediterranean flavors.
Ingredients

- 1 kg bone-in, skin-on chicken thighs and drumsticks
- 1/2 cup (125 ml) lemon juice
- 6 cloves garlic, minced
- 2 tsp Dijon mustard (optional)
- 2 tbsp honey or 1 tbsp sugar
- 1 tbsp dried oregano
- 1.5 tsp paprika
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 5 small potatoes, quartered
- 2 red onions, quartered
- 1 cup (250 ml) low sodium chicken broth/stock
- 250 g cherry tomatoes
- Fresh oregano, for garnish (optional)
Instructions
- Mix the marinade ingredients in a bowl, then add chicken and toss to coat. If time permits, marinate for 24 hours, otherwise proceed to next step.
- Preheat oven to 180°C/350°F. Ensure the oven rack is in the center for even browning.
- Place potatoes and onion in a baking pan, top with chicken skin-side up.
- Pour over the chicken stock then marinade. Use the remaining marinade to baste halfway through.
- Bake for 20 minutes, then scatter over cherry tomatoes, drizzle with olive oil and sprinkle with salt and pepper.
- Bake for a further 30–35 minutes until chicken is golden. Check internal temperature of chicken to reach 75°C/165°F.
- Remove from oven, garnish with fresh oregano if using, and serve!
Notes
For extra flavor, massage marinade under the chicken skin and serve with a side salad or grains.
