Description

A comforting oven-roasted chicken dish with zesty lemon, fragrant garlic, and tender potatoes, elevated by Mediterranean flavors.


Ingredients

Scale
  • 1 kg bone-in, skin-on chicken thighs and drumsticks
  • 1/2 cup (125 ml) lemon juice
  • 6 cloves garlic, minced
  • 2 tsp Dijon mustard (optional)
  • 2 tbsp honey or 1 tbsp sugar
  • 1 tbsp dried oregano
  • 1.5 tsp paprika
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 5 small potatoes, quartered
  • 2 red onions, quartered
  • 1 cup (250 ml) low sodium chicken broth/stock
  • 250 g cherry tomatoes
  • Fresh oregano, for garnish (optional)

Instructions

  1. Mix the marinade ingredients in a bowl, then add chicken and toss to coat. If time permits, marinate for 24 hours, otherwise proceed to next step.
  2. Preheat oven to 180°C/350°F. Ensure the oven rack is in the center for even browning.
  3. Place potatoes and onion in a baking pan, top with chicken skin-side up.
  4. Pour over the chicken stock then marinade. Use the remaining marinade to baste halfway through.
  5. Bake for 20 minutes, then scatter over cherry tomatoes, drizzle with olive oil and sprinkle with salt and pepper.
  6. Bake for a further 30–35 minutes until chicken is golden. Check internal temperature of chicken to reach 75°C/165°F.
  7. Remove from oven, garnish with fresh oregano if using, and serve!

Notes

For extra flavor, massage marinade under the chicken skin and serve with a side salad or grains.
