Description

A classic macaroni salad filled with crunchy vegetables and a creamy dressing, perfect for any occasion and sure to bring people together.


Ingredients

Scale
  • 250 g macaroni elbow pasta
  • 1 1/2 tbsp salt (to cook pasta)
  • 1 cup celery, finely sliced (1 stalk)
  • 3/4 cup red capsicum / bell peppers, finely diced (1 small)
  • 3/4 cup green onions, finely sliced (1 large stem)
  • 1 medium carrot, grated
  • 1/2 cup mayonnaise
  • 1/2 cup yoghurt or sour cream
  • 1 tbsp cider vinegar
  • 2 tsp Dijon mustard
  • 2 tsp sugar
  • 3/4 tsp garlic powder
  • 1 1/4 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Bring a large pot of water to a boil, adding salt.
  2. Add macaroni and cook according to package directions until al dente, then drain and let cool.
  3. Meanwhile, in a bowl, combine all dressing ingredients: mayonnaise, yoghurt or sour cream, cider vinegar, Dijon mustard, sugar, garlic powder, salt, and pepper.
  4. In a large mixing bowl, combine cooled macaroni with celery, red capsicum, green onions, and grated carrot.
  5. Drizzle the dressing over the pasta mixture and toss everything gently to combine.
  6. Taste and adjust the seasoning with more salt, sugar, or vinegar as desired.
  7. Set aside for at least 20 minutes to let flavors meld, then serve at room temperature.

Notes

Allowing the salad to sit enhances flavors; refrigerate for a few hours before serving for best results.
