A classic macaroni salad filled with crunchy vegetables and a creamy dressing, perfect for any occasion and sure to bring people together.
Ingredients

- 250 g macaroni elbow pasta
- 1 1/2 tbsp salt (to cook pasta)
- 1 cup celery, finely sliced (1 stalk)
- 3/4 cup red capsicum / bell peppers, finely diced (1 small)
- 3/4 cup green onions, finely sliced (1 large stem)
- 1 medium carrot, grated
- 1/2 cup mayonnaise
- 1/2 cup yoghurt or sour cream
- 1 tbsp cider vinegar
- 2 tsp Dijon mustard
- 2 tsp sugar
- 3/4 tsp garlic powder
- 1 1/4 tsp salt
- 1/2 tsp pepper
Instructions
- Bring a large pot of water to a boil, adding salt.
- Add macaroni and cook according to package directions until al dente, then drain and let cool.
- Meanwhile, in a bowl, combine all dressing ingredients: mayonnaise, yoghurt or sour cream, cider vinegar, Dijon mustard, sugar, garlic powder, salt, and pepper.
- In a large mixing bowl, combine cooled macaroni with celery, red capsicum, green onions, and grated carrot.
- Drizzle the dressing over the pasta mixture and toss everything gently to combine.
- Taste and adjust the seasoning with more salt, sugar, or vinegar as desired.
- Set aside for at least 20 minutes to let flavors meld, then serve at room temperature.
Notes
Allowing the salad to sit enhances flavors; refrigerate for a few hours before serving for best results.
