Description

Ingredients

  • 1 pound ground beef or turkey
  • 1 teaspoon taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish
  • Sour cream, for serving
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until crispy.
  2. In a skillet over medium heat, cook the ground meat until browned. Drain the excess fat, then stir in the taco seasoning and cook for an additional minute.
