Ingredients

- 600–750g / 1.2 – 1.5 lb chicken breasts (4 pieces) or boneless thighs
- Zest of 1 lime
- 4 tbsp lime juice (1 – 2 limes)
- 2 garlic cloves, minced
- 3 tbsp brown sugar
- 1/4 tsp pepper
- 1 tbsp olive oil
- 2 tbsp finely chopped cilantro (optional)
- 1 tbsp fish sauce or 2 tbsp soy sauce
- 1 – 2 tbsp olive oil (for grilling)
Instructions
- Prepare chicken by pounding it to an even thickness.
- Make marinade by whisking lime zest, lime juice, garlic, brown sugar, pepper, olive oil, cilantro, and fish sauce.
- Marinate chicken in the marinade, refrigerating it for 12 to 48 hours.
- Remove chicken from marinade and let it sit at room temperature for 15 minutes.
- Cook on medium-high grill for 3–5 minutes per side until cooked through.
- Rest for 5 minutes before slicing and serving.
Notes
Allow chicken to rest after cooking for juiciness. Adjust marinade time for flavor depth.
