Description

A zesty and flavorful chicken dish marinated in lime, garlic, and brown sugar, perfect for grilling.


Ingredients

  • 600750g / 1.2 – 1.5 lb chicken breasts (4 pieces) or boneless thighs
  • Zest of 1 lime
  • 4 tbsp lime juice (12 limes)
  • 2 garlic cloves, minced
  • 3 tbsp brown sugar
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp finely chopped cilantro (optional)
  • 1 tbsp fish sauce or 2 tbsp soy sauce
  • 12 tbsp olive oil (for grilling)

Instructions

  1. Prepare chicken by pounding it to an even thickness.
  2. Make marinade by whisking lime zest, lime juice, garlic, brown sugar, pepper, olive oil, cilantro, and fish sauce.
  3. Marinate chicken in the marinade, refrigerating it for 12 to 48 hours.
  4. Remove chicken from marinade and let it sit at room temperature for 15 minutes.
  5. Cook on medium-high grill for 3–5 minutes per side until cooked through.
  6. Rest for 5 minutes before slicing and serving.

Notes

Allow chicken to rest after cooking for juiciness. Adjust marinade time for flavor depth.
