- 1 teaspoon sea salt
- ½ teaspoon baking soda
- Zest of 2 lemons
- ¾ cup cane sugar
- ¾ cup extra-virgin olive oil (plus more for the pan)
- 3 large eggs
- ½ cup fresh lemon juice
- ½ cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, salt, and baking soda.
- Combine the lemon zest and sugar in a large bowl; work the zest into the sugar until fragrant.
- Pour in the olive oil, followed by the eggs, lemon juice, milk, and vanilla extract; whisk until smooth.
- Gradually add the dry ingredients to the wet mixture, whisking until just combined.
- Transfer the batter to the prepared pan, smoothing the top gently.
- Bake for 40 to 50 minutes until golden and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 15 minutes before turning out onto a wire rack to cool completely.
Notes
For a vegan version, replace eggs with flaxseed meal and use almond milk.
