Description

A moist and vibrant cake bursting with lemon flavor, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • ½ teaspoon baking soda
  • Zest of 2 lemons
  • ¾ cup cane sugar
  • ¾ cup extra-virgin olive oil (plus more for the pan)
  • 3 large eggs
  • ½ cup fresh lemon juice
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Combine the lemon zest and sugar in a large bowl; work the zest into the sugar until fragrant.
  4. Pour in the olive oil, followed by the eggs, lemon juice, milk, and vanilla extract; whisk until smooth.
  5. Gradually add the dry ingredients to the wet mixture, whisking until just combined.
  6. Transfer the batter to the prepared pan, smoothing the top gently.
  7. Bake for 40 to 50 minutes until golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 15 minutes before turning out onto a wire rack to cool completely.

Notes

For a vegan version, replace eggs with flaxseed meal and use almond milk.
