Description

A delightful and easy-to-make Lemon Cake bursting with citrus flavor, perfect for any occasion.


Ingredients

  • 1 cup [120 g] all-purpose flour
  • ½ cup [50 g] almond flour or finely ground almonds
  • 1 ½ tsp baking powder
  • ½ tsp kosher salt
  • 2 eggs
  • ½ cup [120 ml] extra-virgin olive oil
  • ½ cup [100 g] granulated sugar
  • ½ tsp vanilla extract
  • Grated zest of 1 lemon (plus ¼ cup [60 ml] fresh lemon juice)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F [180°C]. Butter an 8-in [20-cm] cake pan and line the bottom with parchment paper.
  2. Whisk together the flour, ground almonds, baking powder, and salt in a medium bowl.
  3. Whisk the eggs in a large bowl until fully combined. Add olive oil and granulated sugar, whisk until the sugar is dissolved. Mix in vanilla, lemon zest, and lemon juice. Then, whisk in the flour mixture.
  4. Pour the batter into the prepared pan, using a rubber spatula to scrape it all in. Drop the pan gently on the counter to eliminate air bubbles.
  5. Bake for 25 to 30 minutes until golden brown and a toothpick comes out clean. Cool the cake completely in the pan on a wire rack.
  6. Invert the cooled cake onto a serving surface, and dust with powdered sugar before serving.

Notes

For added flavor, try mixing in poppy seeds or a splash of lemon extract.
