Delightful Lemon Blueberry Cheesecake Bars with a perfect balance of tart lemon and sweet blueberries, ideal for any occasion.

- 12 full-sheet graham crackers (to yield 1 and 1/2 cups (180g) graham cracker crumbs)
- 6 Tablespoons (85g) unsalted butter, melted
- 1/4 cup (50g) granulated sugar
- 16 ounces (452g) full-fat brick cream cheese, softened
- 1 large egg
- 6 Tablespoons (75g) granulated sugar
- 1 teaspoon lemon zest
- 3 Tablespoons (45ml) lemon juice
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups (210g) fresh or frozen blueberries (do not thaw)
Instructions
- Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper.
- Grind graham crackers into fine crumbs using a food processor or zip-top bag with a rolling pin.
- Mix the graham cracker crumbs and 1/4 cup granulated sugar, stir in the melted butter until it resembles thick dough. Press into the bottom of the pan.
- Bake the crust for 8 minutes. Let cool while preparing the filling.
- Beat cream cheese in a mixing bowl for 1 minute until smooth. Add egg, 6 tablespoons of sugar, lemon zest, lemon juice, and vanilla extract. Beat until creamy, about 3 minutes.
- Fold in the blueberries and pour the filling over the warm crust.
- Bake for 30–35 minutes, until set with slight browning at the edges.
- Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 3 hours before cutting into squares.
