Description

Delightful Lemon Blueberry Cheesecake Bars with a perfect balance of tart lemon and sweet blueberries, ideal for any occasion.


Ingredients

  • 12 full-sheet graham crackers (to yield 1 and 1/2 cups (180g) graham cracker crumbs)
  • 6 Tablespoons (85g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 16 ounces (452g) full-fat brick cream cheese, softened
  • 1 large egg
  • 6 Tablespoons (75g) granulated sugar
  • 1 teaspoon lemon zest
  • 3 Tablespoons (45ml) lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups (210g) fresh or frozen blueberries (do not thaw)

Instructions

  1. Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper.
  2. Grind graham crackers into fine crumbs using a food processor or zip-top bag with a rolling pin.
  3. Mix the graham cracker crumbs and 1/4 cup granulated sugar, stir in the melted butter until it resembles thick dough. Press into the bottom of the pan.
  4. Bake the crust for 8 minutes. Let cool while preparing the filling.
  5. Beat cream cheese in a mixing bowl for 1 minute until smooth. Add egg, 6 tablespoons of sugar, lemon zest, lemon juice, and vanilla extract. Beat until creamy, about 3 minutes.
  6. Fold in the blueberries and pour the filling over the warm crust.
  7. Bake for 30–35 minutes, until set with slight browning at the edges.
  8. Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 3 hours before cutting into squares.
