Description

Delicious BBQ chicken quesadillas filled with seasoned chicken, tangy BBQ sauce, and melted cheese, perfect for any occasion.


Ingredients

  • 3 cups chopped/shredded chicken breast (preferably rotisserie)
  • 1/3 cup BBQ sauce (such as Sweet Baby Ray’s)
  • 1 Tbsp. diced red onion
  • 1/4 tsp. red pepper flakes
  • 1/4 cup chopped fresh cilantro
  • 1 1/2 cups grated sharp cheddar cheese
  • 6 flour tortillas (8-inch size)

Instructions

  1. Combine the chicken, BBQ sauce, diced red onion, red pepper flakes, and chopped cilantro in a medium bowl.
  2. Spray one side of a tortilla and place the sprayed side down in a nonstick skillet over medium-low heat.
  3. Spread about a cup of the chicken mixture evenly over the tortilla.
  4. Top it generously with some of the grated cheddar cheese.
  5. Place another tortilla on top and cover the pan with a lid. Cook until the bottom tortilla is golden brown, about 4-5 minutes.
  6. Spray the top of the tortilla, then carefully flip it and cook until golden brown and the cheese is melted, about another 3-4 minutes.
  7. Remove the quesadilla from the pan and repeat with the remaining tortillas.

Notes

Maintain a steady medium-low heat to avoid burning the tortillas. Use warm rotisserie chicken for best flavor.
