Delicious BBQ chicken quesadillas filled with seasoned chicken, tangy BBQ sauce, and melted cheese, perfect for any occasion.

- 3 cups chopped/shredded chicken breast (preferably rotisserie)
- 1/3 cup BBQ sauce (such as Sweet Baby Ray’s)
- 1 Tbsp. diced red onion
- 1/4 tsp. red pepper flakes
- 1/4 cup chopped fresh cilantro
- 1 1/2 cups grated sharp cheddar cheese
- 6 flour tortillas (8-inch size)
Instructions
- Combine the chicken, BBQ sauce, diced red onion, red pepper flakes, and chopped cilantro in a medium bowl.
- Spray one side of a tortilla and place the sprayed side down in a nonstick skillet over medium-low heat.
- Spread about a cup of the chicken mixture evenly over the tortilla.
- Top it generously with some of the grated cheddar cheese.
- Place another tortilla on top and cover the pan with a lid. Cook until the bottom tortilla is golden brown, about 4-5 minutes.
- Spray the top of the tortilla, then carefully flip it and cook until golden brown and the cheese is melted, about another 3-4 minutes.
- Remove the quesadilla from the pan and repeat with the remaining tortillas.
Notes
Maintain a steady medium-low heat to avoid burning the tortillas. Use warm rotisserie chicken for best flavor.
