Ingredients

  • 2 cups Shredded chicken (use leftover roast chicken)
  • 1 cup BBQ sauce (warmed)
  • 2 cups Monterey Jack cheese (you can mix with other cheeses)
  • 1 unit Red onion (substitute with green onions if desired)
  • 1/4 cup Cilantro (or parsley) for a fresh touch
  • 1 cup Salsa (for serving)
  • 1/2 cup Sour cream (add for extra creaminess)
  • 1/2 cup JalapeƱos (mix in or use as a topping)

Instructions

  1. Preheat a large skillet over medium heat.
  2. Spread a layer of shredded chicken on one half of each tortilla.
  3. Drizzle warm BBQ sauce over the chicken generously.
  4. Sprinkle cheese on top and add some sliced onions and cilantro.
  5. Fold the tortillas in half and place them in the preheated skillet.
  6. Cook for about 3-4 minutes per side or until the tortillas are golden and the cheese has melted.
  7. Slice the quesadillas into wedges and serve with salsa, sour cream, and jalapeƱos.
