- 1 lb chicken breast, diced
- 1 cup rice
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup chicken broth
- 1 teaspoon cumin
- Salt and pepper to taste
- Toppings (optional): cheese, avocado, sour cream, chopped cilantro
Instructions
- Add the chicken, rice, black beans, corn, salsa, chicken broth, cumin, salt, and pepper to the Instant Pot.
- Stir to combine.
- Seal the Instant Pot lid and set it to cook on high pressure for 10 minutes.
- Once cooking is complete, allow the pressure to release naturally for 5 minutes, then quick release the remaining pressure.
- Stir the mixture and serve in bowls.
- Add optional toppings as desired.
Notes
For a spicier version, add diced jalapeƱos or a drizzle of hot sauce when serving. Allowing the dish to sit for a few minutes before quick releasing the pressure can help finalize the cooking process.
