Description

Quick and flavor-packed burrito bowls made effortlessly in the Instant Pot, combining rice, chicken, beans, and customizable toppings for a satisfying meal.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings (optional): cheese, avocado, sour cream, chopped cilantro

Instructions

  1. Add the chicken, rice, black beans, corn, salsa, chicken broth, cumin, salt, and pepper to the Instant Pot.
  2. Stir to combine.
  3. Seal the Instant Pot lid and set it to cook on high pressure for 10 minutes.
  4. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then quick release the remaining pressure.
  5. Stir the mixture and serve in bowls.
  6. Add optional toppings as desired.

Notes

For a spicier version, add diced jalapeƱos or a drizzle of hot sauce when serving. Allowing the dish to sit for a few minutes before quick releasing the pressure can help finalize the cooking process.
