Ingredients

Scale
  • 1 1/2 pounds boneless, skinless chicken thighs
  • Kosher salt and pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

  • Sesame seeds, for garnish
  • 1 small green cabbage, thinly sliced
  • 2 carrots, shaved with a vegetable peeler
  • 1 red onion, thinly sliced
  • 1/3 cup chopped cilantro
  • 1/4 cup sliced almonds
  • 1 to 2 oranges, segmented and chopped
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • Big pinch of kosher salt and pepper
  • 1/4 cup avocado oil

Instructions

  1. Preheat the broiler in your oven to high.
  2. Place the chicken thighs on a baking sheet lined with aluminum foil.
  3. Season the chicken all over with kosher salt, black pepper, smoked paprika, and garlic powder.
  4. Broil the chicken for about 6 minutes, then flip and continue broiling for another 6 minutes or until fully cooked.
  5. Mix the hot honey, BBQ sauce, and apple cider vinegar until smooth, then brush onto the chicken thighs.
  6. Broil for an additional minute, flip, and repeat until your desired char is achieved.
  7. Combine the shredded cabbage, carrots, cilantro, red onion, sliced almonds, and chopped oranges in a large bowl.
  8. Whisk together lime juice, honey, minced garlic, salt, pepper, and avocado oil.
  9. Pour the dressing over the slaw and mix until coated.
  10. Slice the chicken and serve atop the slaw, garnishing with sesame seeds.

Notes

For a milder flavor, adjust the amount of hot honey and seasonings.
