- 1 1/2 pounds boneless, skinless chicken thighs
- Kosher salt and pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 3 tablespoons apple cider vinegar
- 2 tablespoons hot honey
- 2 tablespoons BBQ sauce
- Sesame seeds, for garnish
- 1 small green cabbage, thinly sliced
- 2 carrots, shaved with a vegetable peeler
- 1 red onion, thinly sliced
- 1/3 cup chopped cilantro
- 1/4 cup sliced almonds
- 1 to 2 oranges, segmented and chopped
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon honey
- 1 garlic clove, minced
- Big pinch of kosher salt and pepper
- 1/4 cup avocado oil
Instructions
- Preheat the broiler in your oven to high.
- Place the chicken thighs on a baking sheet lined with aluminum foil.
- Season the chicken all over with kosher salt, black pepper, smoked paprika, and garlic powder.
- Broil the chicken for about 6 minutes, then flip and continue broiling for another 6 minutes or until fully cooked.
- Mix the hot honey, BBQ sauce, and apple cider vinegar until smooth, then brush onto the chicken thighs.
- Broil for an additional minute, flip, and repeat until your desired char is achieved.
- Combine the shredded cabbage, carrots, cilantro, red onion, sliced almonds, and chopped oranges in a large bowl.
- Whisk together lime juice, honey, minced garlic, salt, pepper, and avocado oil.
- Pour the dressing over the slaw and mix until coated.
- Slice the chicken and serve atop the slaw, garnishing with sesame seeds.
Notes
For a milder flavor, adjust the amount of hot honey and seasonings.
