  • 16oz (2 x 8oz packages) room temperature cream cheese
  • 1 + 2/3 cups Labneh cheese
  • ¼ cup raw honey
  • 1 teaspoon finely zested lemon zest
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon sea salt
  • 1/3 cup raw honey
  • 1 + 1/2 teaspoons lemon thyme herb
  • 1 teaspoon lemon zest

Instructions

  1. Grab the Amaretti cookies and place them in a clean plastic bag. Crush them finely using a rolling pin until they are a crumbly texture.
  2. In a bowl, combine the melted butter and chopped lemon thyme herb. Mix well until it forms a cohesive mixture.
  3. Press the cookie mixture into the bottom of four cocktail glasses or ramekins. Aim for about 3-4 tablespoons per glass, ensuring an even layer. Set aside in the refrigerator to firm up.
  4. In a large mixing bowl, add the room temperature cream cheese, Labneh cheese, raw honey, lemon zest, lemon juice, and sea salt. Using a handheld mixer, blend until the mixture is smooth and well combined.
  5. Distribute the cheesecake filling evenly between the prepared glasses, layering it on top of the crust. Refrigerate for at least 4 hours to allow the flavors to meld and set.
  6. To prepare the drizzle, place the honey, lemon thyme leaves, and lemon zest into a small saucepan over low heat. Warm gently for less than two minutes, stirring until fragrant and slightly thickened.
  7. Remove from heat and let it cool slightly. Then drizzle the honey-thyme mixture over the chilled cheesecake before serving.

Notes

Make sure all ingredients are at room temperature for easy mixing. Letting the cheesecake set overnight yields the best flavor and texture.
