Description

A quick and flavorful dish with juicy chicken thighs, crisp broccoli, and creamy corn in a delightful honey BBQ glaze.


Ingredients

Scale
  • 1 pkg boneless, skinless chicken thighs
  • 1/2 lb broccoli
  • 1/2 oz honey
  • 1/2 oz tamari soy sauce
  • 2 oz barbecue sauce
  • Garlic
  • 3/4 oz Parmesan
  • 10 oz corn
  • 1 oz cream cheese
  • 1/4 oz fresh chives
  • Kosher salt
  • Ground pepper
  • Neutral oil
  • Butter
  • All-purpose flour
  • 1/2 c milk

Instructions

  1. Preheat broiler with a rack in the upper third. Pat chicken dry, season all over with salt and pepper, and drizzle with oil. Transfer chicken to a rimmed baking sheet. Broil on upper oven rack until chicken is starting to brown, about 7 minutes.
  2. Meanwhile, trim stem ends from broccoli and cut crowns into florets if necessary. Toss broccoli with oil and season. In a small bowl, combine honey, tamari, and barbecue sauce with grated garlic.
  3. Add broccoli to the baking sheet with chicken. Brush chicken with half of the barbecue glaze. Broil until glaze is browned and chicken is cooked through, about 7 minutes.
  4. Finely grate Parmesan and melt butter in a small saucepan. Add corn and cook until it softens, about 2 minutes. Stir in flour and cook until incorporated.
  5. Whisk in cream cheese and milk. Cook, stirring, until thick and creamy, 2-3 minutes. Stir in Parmesan and season.
  6. Thinly slice chives. Serve chicken, creamed corn, and broccoli together. Garnish with chives and brush chicken with remaining glaze. Enjoy!

Notes

Marinate chicken ahead for richer flavor. Can substitute chicken with marinated tofu for a vegan option.
