Description

A flavorful comfort dish that combines sweet barbecue flavors with perfectly cooked rice, perfect for bringing family and friends together.


Ingredients

  • 2 lbs boneless skinless chicken breast, cubed into 1-inch pieces
  • 2 cups long-grain white rice
  • 4 cups low-sodium chicken broth
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 green onions, sliced for garnish

Instructions

  1. Combine the white rice and chicken broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes until the liquid is absorbed.
  2. Season the chicken cubes with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until browned and the internal temperature reaches 165°F (approximately 8–10 minutes).
  4. Whisk together the BBQ sauce and honey in a small bowl.
  5. Reduce the skillet heat to low. Pour the honey BBQ mixture over the chicken and stir to coat. Simmer for 2–3 minutes until the sauce thickens and glazes the chicken.
  6. Fluff the cooked rice with a fork and divide into 4 containers or plates.
  7. Top each portion of rice with the glazed chicken and garnish with sliced green onions.

Notes

Feel free to marinate the chicken ahead of time for deeper flavors. This dish also freezes well for meal prep.
