Ingredients

- 2 pounds of potatoes
- 1 cup of Greek yogurt
- 1/2 cup of diced celery
- 1/2 cup of diced red onion
- 1/2 cup of chopped pickles
- 1/4 cup of fresh parsley
- 2 tablespoons of mustard
- Salt and pepper to taste
Instructions
- Wash and peel the potatoes, then cut them into cubes and boil in salted water until tender.
- Drain the potatoes and let them cool.
- Mix Greek yogurt, mustard, salt, and pepper until smooth in a large bowl.
- Add cooled potatoes, celery, red onion, pickles, and parsley; fold gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
